That special in-season flavor available only at specialty shops
  In addition to the raw materials for cooking and facilities for gourmet food excursions available at the Nishiki Market, there are also shops that have eat-in restaurant facilities, giving you the chance to relish the superb flavor of the fresh produce on sale at various shops.
However, most of these shops are only open during the daytime, and as most close by 6:00 pm, Nishiki Market is very quiet at night. Nonetheless, recently a few Japanese-style bars, called "izakaya" have sprung up along the market street, which are open later.
At the Daiyasu, which specializes in serving oysters, you can see the oysters roasted while you watch, as well as enjoying a glass of Japanese sake. The Ikemasatei company has operated a vegetable store since the period right after World War II, and now the Ikemasatei Restaurant features in-season vegetables grown in the Kyoto area.
The eat-in shops allow you to sample quality products, exclusive to Kyoto, on the spot – it’s a treasure house for gourmet hunters, and a great place to conduct your own food excursion while you experience the bustling crowds of shoppers and the atmosphere created by the local residents coming to enjoy the Japanese style izakaya bars in the evening.
